So-Gal's Recipe: White Chocolate Christmas Cookies

I have a couple cookie exchanges coming up, so I decided to play around in the kitchen with a bunch of yummy ingredients and see what I could come up with. This recipe is perfect for cookie exchanges or for baking Christmas goodies to drop off at friends' houses. Why? Because it makes 100 cookies! (Oh yeah, and because it's delish!)


You will need:

  • 1 cup of unsalted butter, softened
  • 1 cup of dried Ocean Spray cherry craisins
  • 12 oz. of white chocolate chips
  • 3/4 cup of pecans, chopped
  • 1/2 tsp. of salt
  • 1 tsp. of baking soda
  • 2 1/3 cups of all-purpose flour
  • 1 1/2 tsp. of vanilla extract
  • 2 large eggs
  • 2/3 cup of granulated sugar
  • 2/3 cup of firmly packed dark brown sugar
1. Preheat oven to 350.
2. Combine dried cherries, chocolate chips, and pecans in a separate bowl. Set aside.
3. Beat butter and sugars in a mixer until fluffy. Add eggs and vanilla. Beat until well mixed.
4. Add salt, baking soda, and flour to butter mixture. Beat until well mixed.
5. Stir in cherry/white chocolate/pecan mixture.
6. Shape dough into 1-1 1/2 inch balls (about quarter-sized--very small). Bake for 8-10 minutes. Place on wire racks to cool.
