So-Gal's Recipe: Buffalo Ranch Chicken Sandwich


You will need:
  • 1 chicken breast (for 2 sandwiches) or 2 chicken breasts (for 4 sandwiches)
  • Jumbo hamburger buns
  • Wing sauce
  • Ranch dressing
  • 1 tomato
  • Lettuce
  • 1 egg
  • 1/2 cup of milk
  • 1 cup of chicken broth
  • 1 cup of flour
  • 1/4 cup of corn starch
  • Salt
  • Pepper
  • Seasoned salt
  • Vegetable oil
1. Cut chicken breast in half, then use a rolling pin to pound each half until flattened.
2. Pour oil to a depth of 1/4" in a frying pan.
3. Mix egg, milk, chicken broth, flour, and corn starch in a bowl*. Sprinkle in seasonings. Add chicken. Let soak for thirty minutes.
4. Remove chicken breasts and cover with dry flour. Then, add the chicken back to the broth mix and back again to the flour. Place the chicken breasts in the hot oil and let them fry until they are golden brown on both sides.
5. Heat oven to 350. Place chicken breasts on a greased wire rack placed on a jelly roll pan and put in oven for 18 minutes.
6. Add ranch dressing, wing sauce, sliced tomato, and lettuce to sandwich, and enjoy!


*You may substitute all of this for buttermilk--just remember your seasonings!
