Chicken Pot Pie


I'm just gunna' say it: this is slap-yo'-grandma good. This is my momma's chicken pot pie recipe, and I do promise that if you make this once, it will become something that you cook regularly.

You will need:
  • 2 chicken breasts
  • 1 (10 3/4 oz.) can of cream of chicken soup
  • 1 1/2 cups of chicken broth
  • 1 cup of shredded mild cheddar cheese
  • 2 tbsp. of cornstarch
  • 1 cup of mixed frozen vegetables
  • 1 1/2 cups of self-rising flour
  • 1 cup of buttermilk
  • 1/2 cup of butter, melted
1. Cook chicken and shred. Place shredded chicken in a lightly-greased 9X13.


2. In a medium-sized bowl, whisk together soup, broth, vegetables, cheese, and cornstarch. Pour mixture evenly over chicken.


3. In a medium-sized bowl, whisk together flour, buttermilk, and butter. Spoon batter evenly over chicken mixture and smooth out.


4. Bake at 400 for 40 minutes.

  1. We had this for dinner a few nights ago, though I cheated and put Bisquick biscuits on top. It was delicious, thanks for the recipe!
