I got this recipe from Pinterest. It is so easy to make, and it is yummy! I served it with tortilla chips, but it's also yummy on its own.
You will need:
- 2 cans of cream of chicken soup
- 1 can of Rotel (Original is my favorite)
- 12 six-inch corn tortillas
- 2 chicken breasts, cooked and shredded
- 1 cup of shredded Mexican cheese blend
1. Preheat oven to 350.
2. Cook chicken and shred. Set aside.
3. Cut the corn tortillas into bite-sized pieces.
4. Combine the Rotel and the cream of chicken soup.
5. In a lightly-greased 9X9 pan, layer 1/3 of the tortillas onto the bottom. Then, place half of the chicken on top of the tortillas. Spoon the soup mixture on top of the chicken. Repeat layers and top with the rest of the tortilla strips.
6. Cover with foil and bake at 350 for 40 minutes.
7. Top with cheese and bake an additional 5 minutes or until the cheese melts.
8. Enjoy with your favorite people!
