So-Gal's Recipe: Junior Mint Chocolate Cake


You will need:
  • 2 cups of all-purpose flour
  • 2 cups of sugar
  • 1/4 cup of cocoa
  • 1 tsp. of cinnamon
  • 1 cup of butter, salted
  • 1 cup of water
  • 1 tsp. of baking soda
  • 1 large egg
  • 1/2 cup of buttermilk
  • 1 tsp. of vanilla extract
  • 12 oz. of junior mints
1. Preheat oven to 350.
2. Combine first 4 ingredients in a large bowl.
3. Combine butter and water in a saucepan; cook until butter melts. Remove from heat and stir in baking soda. Add to flour mixture, stirring well.
4. Add egg, buttermilk, and vanilla to flour mixture. Pour batter into greased 9X13. Bake at 350 for 40 minutes.
5. Sprinkle junior mints over cake. Bake at 350 for 3 minutes. Let cool completely. Spread *Chocolate Frosting* (see below) over top of cake.

Chocolate Frosting:

You will need:
  • 1/2 cup of butter, salted
  • 1/2 cup of milk (I used 1%)
  • 1 (16 oz) package of powdered sugar
  • 1/2 cup of cocoa
  • 1 tsp. of vanilla extract
1. Combine butter and milk in saucepan; cook until butter melts. Remove from heat.
2. Combine powdered sugar and cocoa in a large bowl; and butter mixture and stir until smooth.
3. Stir in vanilla extract.
